Are tarantulas more aware of their existence than we think?

I've had this question for awhile because I've seen many videos of tarantulas being funny, dramatic, etc and I have experience with my own tarantulas that they respond to me when I talk to them and stuff like that. My GBB won't let anyone handle her except me. I know scientists have said that they don't have any emotions, but I highly doubt that. If y'all want, you can share what you think and/or if you have a funny/cool story about your tarantula(s)!

My GBB knew I was going through something

I know everyone says that tarantulas don't have emotions like humans do, but something incredible happened with my baby today. She is a juvenile and a GBB, so usually I wouldn't hold her, but I was just at rock bottom today, going through many mixed emotions about stuff that happened, so I was just looking into her enclosure which made me feel better. She walked towards me and I carefully opened the enclosure door and she walked right onto my hand and wasn't skittish or afraid at all, which most of the time, she retreats back to her log if I open the door. She just started grooming herself while on my hand and just sat there while I let it all out. I put her back in her enclosure after I was done and she calmly walked back in, which usually she is a very skittish, sassy girl and I would advise to not hold her, but she knew her mama needed her and she showed up. I love you Titty Tae🫶🏻

Am I doing anything wrong for my tarantula?

I got a $150 juvenile Greenbottle Blue tarantula from PetCo last Wednesday, and if I'm remembering correctly, they had just barely got her newly to the store. The store didn't know the last time she was fed and I know you have to wait about 7 - 10 days until feeding them after rehoming, just to give them time to adjust to the new environment. At this point it had been a week since I got her, so I offered her a cricket yesterday and she denied it, so I'm not quite sure if I try to feed her again tonight or not? I know juveniles need to eat more than the adults. However, she has been just chilling in her log basically everyday and had only built webs around the log, she could be more active at night, but from what I've seen, she hasn't moved from her under log for quite a bit. So, she could still be adjusting to her new home and I dont want to stress her out, if so. I got a humidity thermometer for her yesterday and its been around 60 - 70% which is recommended for them, according to Ecosia AI, same with the thermometer being in the 70s, and I have coco fiber soil + just that creature soil from PetCo that helps with humidity and comes in that 8 gallon (I think) enclosure. And, I do have a bigger enclosure for her on the way. She hasn't really shown any signs for molting either, asides from just hiding away all day. Overall, do you guys think she's still just adjusting to her new home, or do I need to fix something about her enclosure? Thank you!

Edit: I was told that 60 - 70% humidity actually was NOT the recommended level, as they are desert tarantulas and like it very dry.

Another edit: After doing a little more research and help from these replies, I'm pretty sure she might be getting ready to molt. She was very active the first day I got her, but now she's been more sluggish, hiding, refusing food, and webbing a lot (that is also common for GBB's though, they are heavy webbers).
