Subbing for fresh lemongrass

Making a coconut beef curry today and the well-reviewed recipe I'm using calls for a stalk of lemongrass, which isn't available near me. Would you:

a) Use lemongrass paste (sometimes these pastes seem to really lack freshness)

b) Use lemon zest (fresh, but not exactly lemongrass)

c) Drive an additional ten minutes to get fresh lemongrass (my regular grocery is already a 15-minute drive)

The fate of my curry rests in your hands, internet strangers! TIA!

Flight cancelled, no others available to original destination

On the last flight of the day that arrives at my destination tonight, and it's looking like it'll be cancelled. There's another airport in the same state as my destination one hour away. Any chance of getting rebooked to that airport without paying in full for a new flight?

HELP! My peanut butter whipped cream fell!

I accidentally beat the daylights out of my peanut butter whipped cream; dinner's in two hours. 🫠 Will add recipe below, but I followed my usual process for whipped cream and just seconds after peaks started forming, it turned into peanut butter slop. Dunno if it was the added solids or fat or what, but I'm hoping it can be salvaged somehow...

1 c. heavy whipping cream

1/4 c. peanut butter

1/4 c. powdered sugar

  1. tsp. vanilla

Advice re: structuring a retainer?

I'm a self-employed IT contractor and a client for whom I do about 30-35 hours of work for per month wants to discuss a retainer. I'm certainly open to it, but I've never set up such an arrangement before.

To anyone with experience - what's a typical retainer look like?

I humbly request your best, sauciest short rib recipes!

My guy's birthday is in a couple of days, and he's been profoundly unhelpful in selecting a menu for the occasion. 😅 We eat pretty well most days (in a "dinner's almost always from scratch and tastes great" way, not a "we dine out often at high-end establishments" way, lol), so it's tough to come up with something "special;" however, he loves a braised short rib dish at a local restaurant. It incorporates a veal demi, bacon jam, and mushrooms, and it's served over garlic mashed potatoes. I don't know that I'll get into making a veal demi, but I thought wine-braised short ribs over mashed potatoes would be a good option.

He's also big on pasta, so a short rib ragu might be nice!

Anyway, there's no shortage of recipes to be found online, so I thought I'd narrow things down by getting input from you fine folks. Thanks in advance for any suggestions!
