Too rare?

HEB American wagyu Denver steak. I’ve never tried Denver steak before, but the marbling looked great. Flavor was good, and I pulled it around 120-ish and let it rest about 8 minutes. Which is my normal routine with sirloin/strips. It ate pretty rare, but the leftovers will be good with eggs in the morning.

HEB Prime Ribeye to kickoff Memorial Day weekend

Reverse seared at 225 for 45 minutes, then hot ass charcoal chimney grill about 4-5 minutes total rotating every 30 seconds, rested for 7 minutes. Pretty dang good. Cheers steak eaters 🥃 with some Copper & Cask 7 year single barrel specs pick. 🫡
