no wrap spare ribs
Still getting used to the Weber Summit, third set of ribs and these turned out the best so far. Went 250-275 for 4h45m, and only thing i’d change is maybe not going so long. These were closer to fall off the bone.
Used Meat Church Gospel and no sauce, just one sprintz at the very end an hour prior to taking them off the grill. Made the Modernist Cuisine mac and cheese recipe too.
