DFW Sapphire Lounge

DFW lounged opened roughly a month ago per the staff. Great experience overall! I left another terminal just to check it out and super glad I did.

Self-serve food & drink options or order from a list of menu items freshly prepared. Cocktails and spirits and the bar were great. Not crowded and super friendly staff.

Espresso machine, cold brew, and freshly brewed local coffee.

If one gripe, the entire place smelled like burgers (which were on the menu). Wish there was more circulation. Left there smelling like delicious burgers.

T. Black’s (DTX)

1st time visiting this afternoon. Food was ok and the brisket was a little dry. Service at both the sides station and the meat station left something to be desired. Better luck next time or another location.

Pork Cheeks

Tried my hand at guancale (Italian cured pork cheek).

Basically prepped it like bacon with a bit less sugar and more aromatics (fresh rosemary, thyme, and dried chili flakes. Followed a basic recipe to get the correct Prague powder (pink curing salt) vacuumed sealed for ~10 days. Rinse and dried while the smoker came to temp. Ran Bear Mountain Sweet BBQ for at 200-100 for about 6hrs until internal hit 155F. I targets this temp because I knew I’d only use it in other food prep like pasta sauces, egg sandwiches, or just plain fried pieces (as shown).

Wrapped in plastic after sampling the merchandise that 1st night. Portioned, vacuum sealed, and frozen for future adventures.

I also have full uncurled belly in the freezer. Been debating on curing bacon or doing a porchetta. We bought a hog at a 4H / FFA auction at the local fair last year. Anything for the kids!

Picked up today from the shop. Full PPF & ceramic coating. Everything I’m reading is mild, abrasive free, and pH neutral. What is the commuting using for washing & polishing with these protections applied?

Typical for Mileage?

Pulled at roughly 6000 total miles from my ‘24 718 GTS (purchased CPO). Do these look typical or extra filthy? My other car is a ‘17 BMW M4 and have maintained a variety of vehicles, but this my 1st P-car. Curious what other 4.0L owners have experienced.
