Tahoma 900

I’ve got a Tahoma 900 and I’m not incredibly happy with it. I’ve checked and double checked that I put it together correctly and everything is good. I’ve had some trouble getting it started but I think I’ve got that figured out now. Here’s my issue. In these pics, I’m doing a rack of ribs. The cooking area has next to no smoke in it, while the fire box area is absolutely silly with smoke. Temp is fine and steady, but how do I get this smoke into the cooking area? The fan is running and moving air just fine.

Dino ribs, back ribs, beef ribs. What’s the nomenclature for what I actually want?

I want to make beef ribs. I keep seeing different opinions on here if they’re good though. I see some people say “if you want [x] you need to get [cut y] and you got [cut z] and they don’t have any real meat on them.” So what am I looking for if I want to make those clickbaity meaty delicious looking ribs I see on YouTube?
