This bad boy has been on my radar for years, but I rarely bake sweets. It was a lot of fun, very different batter than I would normally expect, and delicious. Simple ingredients. A bit dry, I might have overbaked it though trying to get the center firm. Should go great with tea.
Going to be with friends from out of town, I'm particularly interested in places near the Arch and touristy areas. (She isn't celiac or anaphylactic so we aren't worried about cross contamination, but her guts will be messed up if she says, eats a normal pizza or Chinese food that uses wheat soy sauce in cooking instead of tamari.)
The only place I've had before that is really gluten free friendly is Brick River, but everyone is an adventurous eater so I'm open to all suggestions.

This wasn't my original plan. I wanted to make tlacoyos and to daydream about riding on a boat in Mexico City eating all the street food and visiting all the museums.
But I'm pregnant and tired and all my executive function has left the building, and most insultingly so has all of my taste for coffee. Suddenly one of my favorite flavors tastes sour and grassy no matter what beans we buy and brings me no joy. So I needed to do something easier, and while my wife enjoys a blue atole latte I can dream of both travel and once again enjoying my favorite beverage.
I used this recipe, substituting maseca azul.
I remember I used to check these books out from the library when I was a kid (early 90s) from the Joplin Public Library. They were an entire series about a country focusing on the kinds of foods they produced, what their meal structure was, what kind of food festivals and holiday meals they had, and then the end of book was a handful of recipes. They were aimed at k-3rd grade I assume, and the photos were primarily pictures of children or different foods and maps of the country.
They looked rebound, like maybe they had been paperback and the library hard bound them, and they easily could have been late 70s or 80s publishing. I think there was easily 10 of them in the section. I found them so fascinating as a kid.
