Anyone who can offer tips for successful emulsions?

I’ve become a new Thermomix fan since our TM7 arrived in April and have enjoyed trying it out on some of our favorite dishes by either finding or creating Cookidoo versions.

But I have encountered a setback while making emulsions, specifically mayonnaise (and most importantly) toum. We use these versatile sauces often in our recipes and I have become quite proficient preparing them in our blender or food processor. (I have come to prefer using an immersion blender for mayo and a food processor for toum.) However, when trying to make either of these in the TM7, they don’t come out as well – flavor is fine, but the overall quality of the emulsion is poor or broken. When I try to make mayo, the emulsion is weak in structure, almost drippy. When I try to make toum, it just doesn’t happen.

I used the same ingredients (except for the oil) and prep routines from my pre-Thermomix days. I’m glad I kept my immersion blender, which I’ve gone back to for the mayo, since it delivers better results than the TM7. But I no longer have a food processer, so I won’t be wasting any more garlic and oil to make toum until I learn what I’m doing wrong.

The only change I’ve made was to switch from grapeseed oil to Marianne’s avocado oil but can’t see how that could affect emulsion as they both share nearly identical densities and specific gravities.

Before I make another attempt, I’d be interested in hearing from anyone who has experience in making light, fluffy, and cloud-like toum using a Thermomix.

Who's at fault here?

I was headed for a right turn into the Naval Station San Diego Visitor Center on Harbor Drive. (FSD was off because an earlier navigation error required me to disengage and execute a U-turn in order to reach the VC entrance.)

Once headed in the right direction and approaching the turn into the VC, I turned my blinker on and visually checked the bike lane clear. Once clear of traffic and starting the turn, I simultaneously heard an audible motorcycle throttle up while viewing a red border flash on my Tesla's blind spot camera pop-up. I braked only a millisecond before the collision occurred.

Who was at fault? (Note: minor road rash injuries to the motorcyclist thanks to protective gear.)

Driver ignores recently-created bike lane

In my neighborhood, a 4-lane boulevard was re-striped from four to two lanes, sacrificing the shoulder lanes to parking/bikes only. Not too many (except bicyclists) were happy with the idea. Some are unfamiliar with the road striping, although it's clearly spelled out in the driver handbooks.
So I'm approaching a right turn at a traffic light, and am required to stay in the vehicle lane until past the painted buffer before moving into the shared right turn lane. My blinker is on, but the Honda driver behind me has other ideas. He elects to move into the bike lane early and pass me on the right, blocking my legal lane change.

FSD yields to car illegally passing on the right in bike lane

Many of our local streets have been re-striped to include bike lanes. Some drivers either don't understand them or just ignore them.

As I approached a right turn intersection on my route, FSD correctly waits for the dashed line to move into the mixing zone, yielding to any bicyclists who might be in the lane.

In this instance, I was followed by a Honda driver who ignored both the solid white lane divider as well as my turn signal to overtake me and cut off my right turn. FSD arrested the move as it stopped at the traffic light, while the Honda driver did a California stop and completed his turn.
