Ben and Jerry’s Chunky Monkey

Recipe:
Mix Fairlife, allulose, xanthan gum, salt, and a small banana and freeze over night

Spin on Ice Cream setting (do scrape test)

Melt down 15g chocolate chips with 1.5g coconut oil as a mix in. It gives it the shredded stracciatella effect. Optionally add as many nuts as you want as a mix in. Ben and Jerry’s use walnuts but I ran out so I just used pecans

Then top it off with 15 more g of the melted chocolate and coconut oil and let it freeze for a minute, gives it this amazing chocolate bark on top

I honestly am not the biggest fan of banana flavored stuff but I’ve been recreating as many Ben and Jerry flavors as I can and I have to say this one blew me away, the chocolate mixed with banana is so good

What is the problem with artificial sweeteners given you are eating a good diet

For someone eating more than double the RDI on fiber intake per day (60-70g) and lots of various fermented foods (probiotic), hitting all micronutrients, polyphenols, etc, then what is the actual problem with sucralose aspartame etc

Will frozen cookie dough get pulverized

I’m trying to make a cookie dough ice cream and I froze some cookie dough in a tube shape. If I run it on the mix in setting will it turn into dust? It’s the Pillsbury cookie dough Oreo flavor

Fiber one cinnamon brownie mix in (got pulverized, thought it wouldn’t if I froze it. I was wrong)

Wish I could post the recipe but this one wet in the freezer such a long time ago that I totally forgot what’s in it lol

Yes, For the whole thing. Chocolate chips included

Wet ingredients:
75g Chobani zero vanilla
1 egg

Non optional dry ingredients:
35g monk fruit allulose blend (I use 35g but do it to taste, some might like it more or less sweet) - can sub with any sweetener
.5 tsp baking powder
12g cocoa powder
30g dry ingredient of choice:

These are mine
10g soluble corn fiber (can sub with inulin or any kind of flour, just did this for texture and fiber goals)
8g PB fit (for thickness, taste doesn’t come out once cooked)
10g all purpose flour

Optional
Smallest amount of xanthan gum (like .4g)

Total: 224 calories 19g protein 14g net carbs 8g fat 14g fiber

Optionally add chocolate chips (I use Trader Joe’s sugar free, 15g/60 cals)

1 scoop of ice cream from ninja creami - 30 cals

The fiber pbfit and flour can all be subbed out for your powder of choice (eg oat flour, almond flour, all purpose, etc)

Mix everything dry then combine with wet and microwave for 2 mins on high or bake it if u are more patient than me
