Crust is canned chicken, eggs, and pork panko. Sauce is cream & cheese. Happened across some super cheap thin cut bottom round that was surprisingly well marbled and threw that on there with pepperoni but I vary the toppings.
6 eggs and leftover smoked chuck roast.
Tip: salt your eggs, whisk, then let sit for ~10 minutes before cooking. If they’re fully cooked in the pan, they’re overcooked on the plate. Pull them early!
Grabbed a pork belly at Costco and slow cooked a slab. Had about 7lbs left and decided to give it a shot. No sugar & curing salt with no additives. Made chicharrones with the skin. Lesson learned: will definitely buy a meat slicer before I try to slog through cutting 7 lbs of bacon again.
Side note - I see a lot of caution for pork around here. It’s packed with nutrients including thiamine which you’ll be hard pressed to find in other foods and a whole pound of pork comes in with less omega 6 than a singular tablespoon of seed oil.
Eat pork. Get enough omega 3s in your diet. Profit
I say “mostly” because at least the first 6 months were a slow transition. Even now, I might have some blueberries & yogurt once in a while, an avocado 2-3 times a week, and that’s it.
A year and some change ago, HDL was 25. Now up to 43. ALT was high 50s a few years ago. Now down to 17. Inflammation markers down. Trigs still need some work (101) but after a year+ of dietary healing, I’m exercising much more in the past few months and feeling better every day.
All markers have improved. The plant-based crowd says I should be miserable and on death’s door.
I’ve cooked it every which way imaginable and this is my favorite. Take a pound of bacon, twist each slice and lay it in my Tastee air fryer, then do a second cross layer like a hash pattern, 340 degrees for about 20-25 minutes stirring the bacon every 5-6 minutes.
You get crispy bacon that doesn’t have a burnt flavor and yield a ton of grease to cook with for the rest of the week!
Probably my 8th one. Started with no knowledge and worked my way through YT videos. At $6/lb, you can’t beat it. Highly recommend for anyone looking for a low cost option to get some good cuts!
A few months in, you’ll kick “the crave” and forget what it was like to want anything else. Life is good
Local health food store had some of the most marbled pork chops I’ve ever seen. Seared in the cast iron with a mix of tallow & bacon grease and finished in the oven at 400. Knife cuts through like butter.
Don’t sleep on the pork chops if you find some good ones!
Sometimes I smoke em. Sometimes I grill em. Sometimes I even cook em in the air fryer. But man I love a stainless steel crust
