Is it common (or allowed) to basically take weeks of PTO to use up your leave balances prior to retirement?

I used to be able to buy aged gouda cheese from Holland, like Beemster and other brands, but for a very long time now I can't find it at ANY HEB. I've looked a lot. I'm talking about the hard cheese aged a year or more. What gives? The soft gouda, smoked gouda, etc is not at all what I am looking for.
