Recommendations to finish my LASH

In 2024 I hiked from GA to harpers ferry (roughly half way). I only planned to do half and by the end, I was beating myself up for not planning and preparing to do the rest. Next may, I will be moving and logistically it seems like a good opportunity to finish my hike.

I'm wondering if starting at the beginning or middle of May would lend itself to a flip flop of beginning in Maine or whether picking back up in harpers ferry would be best for weather and such.

Would love any thoughts you all have!

Getting entry level experience outside of current practice area

I'm five years into being an attorney and in that time I have done exclusively contract drafting, negotiation, execution. Originally did academic clinical research contracts then went in-house to a pharma company doing more contract drafting (clinical trials and vendor contracts). Company got acquired and got a golden parachute for 6 months. Tackled some personal goals and now for the past two years I have been in house in the energy industry, doing more contracts. I'm currently commercial counsel, working remotely, making good money. But here's the rub - I hate it. I hate the work, hate the company, hate almost everything other than the money and being able to work from home every day.

I have always considered what else I can do with my degree and license and have briefly considered things like criminal defense/prosecution or family law. But I obviously have 0 experience in a court room other than brief writing and law school stuff.

Is it too late to do anything else? Too big a jump? Is there a way to slowly shadow or gain experience in these completely new practice areas ? Would love some humbling perspective. I know I can't do what I'm doing the rest of my life and be happy about it.

Is the e24 + Varia vs4 the best bang for my buck under $1000 total?

Pretty locked in on getting the classic e24 but still trying to find the grinder to pair it with. Was going to do df54 or 64 but the aesthetic seems subpar. Wondering if I could do any better while staying under $1k

Is the Gaggia classic pro e24 the gaggia classic evo pro?

It seems they only sell one classic model on their website and that’s the pro e24. I was doing research and seemed they upgraded with the evo to a 9 bar pump with upgraded boiler (with controversy?).

If I buy the classic pro e24 is that already the upgraded one and they don’t sell the evo anymore(they merged?) trying to sort out the models in my head.

Really seem set on the gaggia classic with the understanding I will need to tinker, maybe mod, and dial it in as I go. Is the quality without any mods equipped seriously bad or does it just require temp surfing ?

Xl flow control cap recipes

Just received the flow control cap in the mail and am looking for recipes for how to make espresso style crema with it. I tried 18g coffee and 60ml of water but I think that was too little water or maybe I messed it up. Thanks in advance!

Love me some barbacoa but the huge fatty globs you sometimes bite into can ruin a bowl for me. I understand that they're part of the meat and inevitable, but I'm curious if anyone has any strategy for avoiding the fatty bits to the extent possible.
