Lobster rangoon grilled cheese sandwich
— makes 1 serving —
2 thick slices brioche or challah
2 tbsp butter, softened
2 tsbsp olive oil
1/4 cup whipped cream cheese
1/4 cup freshly shredded low-moisture mozzarella
2 tbsp chopped green onion
1 tbsp kewpie mayo, or regular mayonnaise
1/4 tsp minced garlic
A splash of soy sauce
Salt and pepper to taste
3-4 tbsp cooked lobster meat
to serve:
spicy mayo
more sliced green onion
black sesame seeds
sweet Thai chili sauce
Set a pan over medium-low heat. While it warms, butter the outside of the slices of bread.
In a separate small saucepan over medium-low heat, combine the cream cheese, shredded mozzarella, green onion, mayo, garlic, soy sauce, salt and pepper. Stir until the mixture is melty, then fold in the lobster meat and slowly let it warm.
When the first pan is hot, add the olive oil and let it come to temperature. Place one slice of the bread butter-side down in the pan, then carefully spoon over the lobster rangoon mixture. Top with the remaining piece of bread, and let the sandwich fry until the bottom is crispy golden brown. Flip and repeat.
Halve the sandwich, then garnish it with spicy mayo, sliced green onions and black sesame seeds. Serve it with a ramekin of sweet Thai chili sauce for dipping, and enjoy!
