Can we talk collared greens? What’s the best way to compliment my ribs and brisket with these monsters

I am confident in my bbq abilities. Trying to master the traditional sides now. I love collared greens when I go to a classic smokehouse, but I’ve never cooked them.

I’m growing from scratch this year and they just BLEW UP this month. When should I harvest? What’s the best way to cook? Is there a reasonable way to save them for later?

My local Costco had boneless skinless chicken breast for $1.69/lb if you got a 40lb box

I shredded 30lbs, baked 5, and saved 5 to grill out tomorrow. The shredded chicken is going in the freezer. It took most of the evening to make it, but it saved a ton of money and we don’t need to make shredded chicken for soup for the next few months.

They also had chicken wings for $0.60/lb in the same 40lb box. I think we might do those on the smoker for the 4th. If you have a Costco business center by you, I suggest checking it out.
