Dealer Etiquette?

I would classify myself as a newbie but I have played enough to understand the basic player etiquette, but there is something that has always bothered me and would like to hear what other more experienced players think.

At the local casino today, the dealer to the left of the box would frequently pick up the dice and move them to the middle of the table after a roll, even though it was an easy get for the stick. Something about that just bugged the hell out of me. Now I am not one to set dice or anything like that when I am throwing, but still this seems like a no-no.

I can’t remember seeing anything like that in Vegas.
What are your thoughts/opinions on that?

I guess if you are going to ignore the three no left turn signs, you may as well ignore the traffic cones as well.
