Babysat my toddler nibling for a weekend and I wanted to bake with them. I thought making banana chocolate chip would be a fun and easy thing. We definitely had a good time (second picture shows how chaotic it got when it came to scooping the batter into the muffin tin. haha)

Week 16: Herbs- Lemon basil shortbread

Life had been busy and I’ve fallen behind on the challenges, but I’m starting to catch up! Made these lemon basil shortbread for the 4th of July celebrations since I had some lemon on hand and my basil plant needed a good trim. Turned out way better than expected!

Create a street food festival with the Twin Cities Amateur Bakers Club on 6/28 at BlackStack Brewing!

There is rain in the weather forecast, so the location has changed since the original announcement post!

The Twin Cities Amateur Bakers Club will now be hosting our next meetup at BlackStack Brewing (St. Paul) on Sunday, June 28th from 1 - 3 pm. As always, we would love everyone who has any interest in baking and want to support others in their baking to join us!

The theme for this meetup is “TCABC (Twin Cities Amateur Bakers Club) Bake Street ” Each person attending should bring a baked good that can be found when you walk by a food stand/truck (totally fine if it isn’t 100% a baked good). In other words, something that can easily be consumed as you explore your surrounding

We will also be doing a clothing drive for Rainbow Wardrobe at this meetup. A list of their current items of interest can be found here: https://tcpride.org/rainbow-wardrobe/

Mango raspberry crepe cake for my birthday!

Like always, I like to do this challenge of not testing a recipe first and hoping for the best. So that means this was the first time I’ve made crepes. It was a disaster the first few I attempted to make, but I ended up getting making 17 crepes for this 17-layered mango raspberry crepe cake! Turned out way better than I expected. here’s to another year older!

Saffron Cardamom Buns

Made some saffron cardamom buns for my local bake club meetup this past weekend! some of the saffron came from saffron I harvested from my saffron crocus this past fall.

these were definitely tasty! but if I do end up making these again, I would add some cardamom to the dough to give it more of a cardamom kick.

Spring into floral-ful baked goods with the Twin Cities Amateur Bakers Club on 5/17 at Blackstack Brewing!

Due to rain in the weather forecast, the location has changed since the original announcement post!

The theme for this meetup is “Bakes in Full Bloom” Each person attending should bring a baked good that is either floral-decorated (having some sort of edible flower on it), floral-shaped (looks like a flower), or floral-infused (flavored using some sort of flower).

We will also be collecting commercially packaged seeds for various free seed libraries around the Twin Cities at this meetup. If you are able, please consider bringing commercially packaged seed packets of either fruits, vegetables, and/or native flowers!

First time making laminated dough was daunting, but I made through it! I’ve always wanted to make my croissant and this challenge made me finally get around to it. It was a bit of a fail trying to get the dough laminated since the butter squeezed out in some parts. but hey, it was definitely a tasty learning experience!
