Starting to get the hang of this I think

My processs:

It was 26.5 degrees celsius in my kitchen so I opted for a short bulk ferment of just 4 hours and cold ferment of 11h in fridge.

  • 30 min autolease,
  • 4 sets of coil folds 20 minutes apart
  • Let it rest on countertop for 2 more hours.
  • Did a final shaping and put it in fridge.
  • baked the next morning at 250C for 25 minutes in dutch oven
  • removed lid and baked for 10 more minutes at 200C

Recipe:

  • Whole wheat flour: 22 g | 5%
  • White wheat flour T65: 422 g | 95%
  • Water: 289 g | 65%
  • Levain: 67 g | 15%
  • Salt: 9 g | 2%

What do you guys think? Maybe a bit under proofed? But it tastes great.

blade deflection on Festool TS55 when doing a skim cut

I lost so much time today chasing this issue. I kept getting bowed cuts and slightly beveled cuts ( saw is set at 90 degrees) on a birch ply panel when doing a skim cut, (trying to cut a sliver less than 1mm). Kept thinking my rail was bowed or my rail square was causing issues.

Finally I noticed it's the TS55 itself. When doing these kinds of cuts. When there is proper blade engagement on both sides the cuts are square and straight.

Has anyone else noticed this? What is the cause? Dull blade? How can I solve this?

Child care on Saturdays?

Hello everyone, I have the opportunity to take on a new job, but there will be some weekend hours involved. Probably 2 Saturdays a month. So every other Saturday. My partner also does weekends, so I'm looking to see how I could arrange for childcare on those overlapping days for my 6 months old baby. Most creches don't do weekends so I guess it will be private child care. Any suggestions for the Anderlecht, Molenbeek, Koekelberg area?

I have a house in 1080 that I bought and renovated 10 years ago. But I'm ready to move to another commune within Brussels. I was thinking of renting out the house and buying something else in another commune instead of selling it.

However, since it's a big single family house (250m2) it would have to be a colocation. I hardly see single family listings on immoweb in Molenbeek. It would be for 2 young people who want to live close to the center. 1 shared living room and kitchen and each person has their own bedroom on each floor.

Anyone have experience with colocation renting? How do you approach this, do you find them yourself separately or do they present themself together? You post this on FB groups? What about contracts? How are your experiences with renting out real estate in Brussels?

I don't know what it is but this is already the 4th time in a couple of months I've had a verbal altercation with someone about my dog. I live in Molenbeek and the sight of a dog shitting (i do clean it up) or pissing in the grass is somehow very offensive to some people here. It's always some random dude who is passing at the same and feels the need to express his disgust. Any dog owners here that have had similar experiences?
