55% hydration, boiled the bagels and gave the pretzels a 3% lye bath. I think they turned out very nice. Best bagels I have made, for sure.

I guess I don't understand why he didn't use the ladder racks or opened the tailgate, or even just let the 2x4 stick out past the closed tailgate. These can't be longer than 8-10'.

40 years later, he finally got me.

Yesterday in a bad pull in a lvl 10 version of the Shadow Enclave, I was dealing with 3 elites with my hunter after my trap broke. I did manage to get all 3 down eventually, only to see my health about down to about 0 after I stepped into the dark for too long. Yep, you guessed it, the Grue got me. I laughed out loud and was instantly taken back to 1985 and the monochrome screen of our family Panasonic computer. I've been threatened by that damn Grue since then and this is the first time I remember actually being killed by one.

Oh well, live and learn.

1 day sourdough- loaf pan FTW

I baked two loaves yesterday. Usually, I do an overnight proof, but I ran out of time over the weekend and had to do the entire BF and proof in one day.

Pulled the starter out of the fridge Sat night. I only keep 20-ish grams in the fridge so there is not any discard. Fed it 100 grams each of water and flour and let it sit on the counter over night to double.

Sunday morning, mixed up 1000 g flour, 200 g starter and 700 g water and 20g salt. Pretty standard recipe. Put it in a stand mixer for a few then did a couple stretch and folds every 30 min, then into a cold oven with the light on to BF. BF from about 10AM to 4:30PM. proofed on the counter until 8. I put the loaf pan version directly in the loaf pan lined with parchment paper to proof. Then into a 500° oven, covered for 30 min, then uncovered for 25 more. Dutch oven for the round one and a 2nd loaf pan to cover the loaf pan one.

Honestly, the loaf pan version was easier, held it's shape better and looks great. I have yet to cut into them so no crumb pics, but given the oven spring, they should both be great loaves.
