Hello friends! I am an anglophone Canadian, and I love paella. I've been cooking it more and more since buying a 50cm paella and outdoor burner, I've done the traditional Valencian (I have a guy who gets me rabbit) and I've done the mixed seafood style (not "Paella" paella but in Canada, if you say arroz con cosas or arroz marisco, people don't know what you're talking about).

Sorry to ask if this is blasphemous here, but I wanted to make an arroz/paella with beef shin, I thought it would be delicious, but worry that beef broth might overpower the saffron and smoked paprika.

Has anyone tried paella with a beef based broth?

I'm over near Northward/Fairfield, have heard helicopters overhead a couple times today.

Does anyone know of a way to get local radar or flight tracking if I just wanted to know who's in the sky, and to try and figure out why so much traffic?
