Got a nice master built cabinet smoker for father's day.
Been smoking twice a week since. I had to work this 4th so I'm smoking tomorrow. Spare ribs, chicken wings, bacon burnt ends, chicken thighs. Sides: Peppadew Mac and cheese, eloté (off the cob) smoked turkey greens, and white bread. Apps: smoked cheese dip, texas twinkies, and fire roasted salsa. I'm a chef but I'm specialized in Neapolitan and Sicilian. Any tips are welcomed. Using a master built 20070805, hickory chuck wood.
