Brothy rice with homemade veggie stock and chicken. Feedback on my method please, how to improve?

  1. I sautéed celery, garlic, porcini mushroom, tbsp tomato concentrate, bay leaf and peppercorns. (Sorry I hate cutting onions)
  2. Added water and simmered for 45min.
  3. Strained veg. Added salt, herbs and soy sauce. Needed lots of sodium as it was basically a sweet vegetable water.
  4. Separately prepared chicken breast in the oven and rice.
  5. Put it all together and added lemon as it wasn’t tasting quite right, still felt too much sweetness from carrots and not enough savoury umami flavour.

I don’t know what so was aiming for but I want to learn more dishes like this that feel hearty and easy on my tummy. Please tell me any better methods and especially how to improve flavours.
