Hi! I am in the process of starting a coffee cart for catering and events in Portland. I’m running into a wall trying to figure out where to dispose of my grey water in compliance with the health department. I need a signed agreement from an approved location that’s ideally close to where I will be parking the bus when not in use, FoPo area. Is there any restaurants/ commissary kitchens/ food cart pods in the area that would let me do this? Any other advice is greatly appreciated!!

Coffee bus can fit in a regular sized parking space, if that makes a difference! Also, we currently do not have plumbing set up in the bus so if there’s any diy advice there that would be amazing. Thank you!

IMO my place looks sm better at night with all my little lights glowing but I tried to take pics like that and I just can’t get it right 😭 this is how it typically looks tho!
