Yet another rice recipe; 497 kcal, 47g protein, 10.2g fibre

It was delicious! Definitely recommend you guys to try it :)

Ingredients
- diced chicken breast 600g
- cooked brown rice 250g
- cauliflower rice 400g
- runner beans 300g
- peas 250g
- broccoli 400g
- basil 15g
- lemon juice 50ml
- pesto 150g

Steps
- boil the broccoli and runner beans in 1,5L of chicken stock for 6-8 min
- cook the chicken until golden brown and set aside
- add the broccoli, beans, and peas to the pan and stir fry for a minute or two
- add the cauliflower rice and cooked brown rice and mix well
- mix in the pesto and any spices you like (I used salt, pepper, and a good amount of chili flakes)
- add the chicken and lemon juice and mix
- cook covered for like 2-3 mins
- give it a super good mix and garnish with chopped basil

Got inspired by the recent fried rice recipes here - 443kcal, 53g protein, 13g fibre

Gochujang fried rice! It was delicious 😋
Here’s the recipe if anyone wants to try it out:

Ingredients (4 portions):

600 g chicken breast, diced
400 g cauliflower rice
900 g Frozen Dutch stir-fry vegetables mix*
4 large eggs
50 g spring onion, sliced
2 tbsp soy sauce
15 g oyster sauce
10 ml fish sauce
1 scoop gochujang
250 g cooked brown rice

* veggie mix contains carrots, yellow onions, peas, green beans, mushrooms, corn, garlic/parsley margarine

Steps:

- Cook the chicken (golden brown) and set it aside
- stir-fry the vegetable mix. Once that’s cooked, add the cauliflower rice and mix. Let it cook for about 2 min
- add the brown rice and give it a good mix
- add the soy sauce, oyster sauce, fish sauce and gochujang
- add the chicken and mix again
- cover and let it cook for 3-5 min on low (helped my precooked rice soften up a bit)
- push the fried rice on the side and add the eggs
- let it sit for about 10-15 secs, then mix it in with the rice
- once well mixed, cover and cook on low heat for 5-6 min
- season with salt and pepper and top with spring onions
