How to brew according to recipe?
I saw a recent Lance Hedrick new recipe video, but he won't recommend grind size because each grinder is different. Instead, you are supposed to grind according to the brew time.
I tried that method on a different recipe.
Here's Goodman Roaster (Ito atsuomi) recipe for Kalita Mino 155:
90-95C
16g - 250 (15.625)
00:00 70g (stir 5 sec after pour)
00:30 150g circular pour
01:20 200g circular pour
01:50 250g center pour
brew time 3:30
He says the grind size is 26 clicks Comandante, even though I don't think he actually uses Comandante when he brews.
I don't know what that is on 1zpresso X-Ultra.
But based on honestbrewguide 26 clicks should be 700 microns,
and according to honestbrewguide, 700 microns should be 2.2.0.
Am I converting this correctly?
I use 92C temp.
Even at 1.4.5 setting (525 microns according to hbg), I am getting only 2:40 brew time. I probably have to grind much much finer to stretch the brew time to 3:30.
I don't think that filter paper is the issue, since I am using original Kalita wave filter paper.
At 1.5.5 (575 microns according to hbg), it's bitter.
At 2.1.0 (650 microns), no bitterness. Brew time less than 2:20.
Maybe when following a recipe, you should never follow the brew time??
