How to brew according to recipe?

I saw a recent Lance Hedrick new recipe video, but he won't recommend grind size because each grinder is different. Instead, you are supposed to grind according to the brew time.

I tried that method on a different recipe.

Here's Goodman Roaster (Ito atsuomi) recipe for Kalita Mino 155:
90-95C
16g - 250 (15.625)
00:00 70g (stir 5 sec after pour)
00:30 150g circular pour
01:20 200g circular pour
01:50 250g center pour
brew time 3:30

He says the grind size is 26 clicks Comandante, even though I don't think he actually uses Comandante when he brews.

I don't know what that is on 1zpresso X-Ultra.
But based on honestbrewguide 26 clicks should be 700 microns,
and according to honestbrewguide, 700 microns should be 2.2.0.
Am I converting this correctly?

I use 92C temp.

Even at 1.4.5 setting (525 microns according to hbg), I am getting only 2:40 brew time. I probably have to grind much much finer to stretch the brew time to 3:30.

I don't think that filter paper is the issue, since I am using original Kalita wave filter paper.

At 1.5.5 (575 microns according to hbg), it's bitter.
At 2.1.0 (650 microns), no bitterness. Brew time less than 2:20.

Maybe when following a recipe, you should never follow the brew time??

Resto Seafood milik Food Blogger

Penasaran dgn rasa moray eel.
Katanya bikinnya lama banyak tulang yg harus dicabut. Rasanya gitu aja. Nothing special.

Rasa kerapu tim dimana2 sama, sausnya aja yg beda. Saus Nyonya sama Saus spesial resto hampir mirip rasanya (di foto keliatan mirip kan?), mungkin bumbunya banyak overlap. Rasanya dar der dor!!! tapi not in a good way. Manis, pedes, asem, gurih, asin, campur aduk berebut perhatian lu. Gak ada balance.

Banyak teman2 food blogger sudah datang review tempat ini, tapi kenapa gak ada yg komplen ini? Antara mereka semua gak berani jujur (emperor's new clothes situation) atau lidah mereka parah semua.

Ada pesan jg menu2 lain seperti ikan bakar. Tapi gak memorable, gak difoto.

Rahang tunanya doang yg enak, bumbunya pas tidak keasinan. Porsinya jg lumayan banyak, kayak dagingnya gak habis2. Tapi klo buka resto seafood cuma 1 signature menu doang yg enak, emang cukup?

Resto sangat rame pengunjung, datang harus ngantri.

Meskipun lokasi di PIK 2, food blogger ini chinese, pemilik resto (original chef) chinese, chef yg kelola adalah chef veteran di industri F&B jg chinese, resto ini hampir tidak ada pengunjung chinese. Mungkin karena yg chinese tau ini agak mahal, mereka cenderung ke resto2 seafood lain yg lebih enak & better value kayak bandar, sentosa, aneka, dll.

Creamy candy coffee + Goodman recipe!

Bought this due to its unusual process & flavor notes.
Candied peach, Apricot, Red Berries Honey.
Kartika, Lini - S, Typica. 1500 MASL.
Tsani Fakhrezi, Sixty Percent Coffee, Harvest 2025.
Natural Nitrogen Maceration with Dark Room Drying.

I love peach candies. But I don't think this taste like peach candies.
Roasted on 30/4, but after 3-4 weeks, it tastes forgettable?
Today, it's 5 weeks, and it has this sweet & creamy texture bursting out.
I can feel this creaminess coating my mouth.
Almost like drinking milk. Very unique.

I added milk in 1:1 ratio to boost its creaminess.
I like both versions, but I slightly prefer it without milk.

At first, I suspected this to be infused, but after brewing it the flavors are subtle.
(I've had more fragrance washed ethiopian or geisha.)
After 3 days in a sealed container, this smells moldy & stale,
unlike infused coffee which can smell perfumy for weeks.

Brew using Goodman's recipe:
Kalita Mino 155
90-95C
26 clicks 700 microns (2.2.0 on 1zpresso X-Ultra according to honestbrewguide)
16g - 250 (15.625)
00:00 70g (stir 5 sec)
00:30 150g circular pour
1:20 200g circular pour
1:50 250g center pour
brew time 3:30

The setting I actually use 1.4.5, 95C, brew time 3:00.
