Pruning advice

I bought my first house two years ago, and was blessed to have a wide variety of fruiting trees and plants on property. Unfortunately, I have no experience with this and I’m not sure how to manage them. I have fig plum apple Seaberry Asian olive, Mulberry, and I believe a persimmon, which is heavily shaded and not fruiting.
Any solid general advice for pruning? I want to keep these trees, a manageable size but still bearing fruit. Can I prune them all in a similar fashion or do I need to individually figure out how to care for each?
I’m just so nervous to damage these lovely trees thanks for any advice

First mushrooming adventure. Blue Mountains Oregon USA.

I believe I have yellow coral and puffball mushrooms. Please confirm my identification and thanks for your help! Why identification book shows both of these is edible
