Question about how to stay with a specific project and get myself into "work mode"

I am an artist, and I really love making stories and beautiful imagery. But I have a few problems with staying bound to one project. I keep coming up with fun and cool stories and ideas to create beautiful imagery and on one hand now I am a jack of all trades, but on the downside I have a lot of projects I still want to finish, but the issue is I find it difficult to get myself to go back to these old projects when there is the new "shiny" project I could also work on. Usually I get the response that I just need to find the motivation, but that doesn't really apply in my opinion. Because I have the motivation, I am really excited about that project, it's more I guess willpower. That I can sit Infront of my pc really wanting to work on the project Infront of me, but I just can't get myself to start and that is sad (because I really like that project). 

The reason for this I think (example for a story) is because when I start thinking of a story my mind sees a whole new world Infront of me and I think of every character, set piece, events, etc. And when I start physically (digitally ig) working on a project, I still don't have a full grasp of the final project. So I start the project, and after a while of mentally starting to iron out the details I am mentally done, and I put it on the metaphorical bookshelf in my mind. But then I'm not done with the project of making it digitally but because my mind says its "done" I can't get myself to continue because its "done" and I just thought of a new story that isn’t done yet, so my mind really wants to start that one now.
At least that is how I interpret the issue.

And another issue I have been having whomst is unrelated to the previous one (the previous one douse strengthen this one but aside from that its unrelated) when I have a project (school, art, etc) it's hard for me to get into “work mode”. I just sit Infront of my pc doing nothing and easily getting distracted. And when I do get into "work mode" I can just focus and do my stuff, but it's really difficult to slip into “work mode”. I have gotten tips on it like "do fun stuff when you're done" or the fact that usually the thing I need to do can be done in 10 minutes and is really easy or even that I like doing that thing I am putting off. But I can't do those projects because I am not in "work mode" and with the fun things afterwards tip I do do that, but because I can't do my original task I end up also not doing the fun thing so I just sit there wanting to do the fun stuff but not doing it because first I have to finish the thing I need to do and in worse scenarios I end up not doing both. And that kind of sucks. 

So, my question is if any of you have gone through similar scenarios and if any of you have tips for me on how to deal with this?
