New to sharpening

Hey guys- I had upgraded my kitchen knives a few years ago and paid to have them sharpened professionally. They came back great, but it’s something I feel I should be doing as I already take extremely good care of my kitchen tools. I’ve been lurking on this sub for several weeks and think it’s time to ask for a little direction. I have the Shapton 1000/5000 grit combo picked out. I’m also considering an Atoma diamond #400 flattening stone and a basic strop. Do I have the basics picked out? My main knives are ginsan and super aogami. I have older stainless I’d practice on first. Thanks for taking the time to respond!

Haworth Fern

For context I’m 5’8 198 lean. I just spent a year with the Haworth soji. I had a staples mesh ergonomic chair before that for 10 years. I only went with the soji because I couldn’t rationalize paying $1k for an office chair… well here I am with one sitting in my home office, and an hour later, it might’ve be a really good decision. The seat of the soji bottomed out after a year- became very firm and I was developing pressure points in my butt. I ended up buying a $25 18in gel pad (cubed exactly like the $130 purple cushion). If you like your chair but the cushion isn’t right, a $25 gel pad can fix your problems and save you money. I’m also a leaner and sloucher and needed something with a higher back.

First impressions of the fern an hour after delivery- the cushion is much different than the soji- more plush. It’ll be interesting to see how this holds up over time. AI tells me Haworth doesn’t use the same cushion for their chairs, and right away I feel that. As a 5’8 sloucher, I pulled the seat pan almost all of the way out. A lot of people complained about the gap between the seat pan and back rest, but I don’t notice it all. I can see it, so I acknowledge that it’s there, but no issues sitting straight up, leaning back or leaning and slouching. If you have longer legs, I can see where the seat pan might come short of what you need, but that is subjective and I’m guessing. Sit in it first to make the decision.

Arm rests- when extended all the way up, they are higher than the soji. My desk is higher, and I had to buy 2 inch pads to attach to the soji to avoid wrist pain. I don’t think I’ll need them with the fern. They are comfortable and very adjustable.

Lumbar- I got it and I’m glad I did. It’s not intrusive as opposed to other reviews. Fits me well.

Digital mesh- super super super soft and comfortable. I fell in love with it right away.

Recline- miles better than the soji. Even without the headrest, the base of my skull is supported by the top of the chair. I’m debating about the atlas headrest because it was something I researched and would fit my sitting style. There’s multiple recline angles to stop at and a tension adjuster so you don’t go flying all of the way back in full recline.

Looking back to a year ago, I avoided the fern and many in this category, because of the price. I purchased it during Haworth’s 20% off summer sale and at $1300 with all
Of the upgrades (except headrest) I can say for sure I still feel the same. None of these chairs are worth the cost. $800- sure/maybe. I have to assume increased shipping costs are built into these prices since Covid inflation. But there is value in what I’m sitting in as I type all of this out. I can feel it- just not $1300 worth of it.

I’m going to use every minute of the 30 day free return policy to decide, but I’ll likely keep it. Ive come to understand there is no perfect chair. You’d have to Frankenstein 2-3 chairs together to get your unicorn. The fern checks the boxes in my major needs categories so far and it looks absolutely great too. Something else to consider is that our bodies weren’t meant to sit for 3-4 hours at a time yet alone 7-10 hours per day. Get up, move, eat healthy, drink water, take care of yourself. The chair will hopefully not add to the problems, but in conjunction with a somewhat decent lifestyle, keep it at status quo.

Finally got my Batman and Robin

-Hado Gyuto 240mm Ginsan Silver 3 Cherry by Shougou Yamatsuka

I’ve had the Hatsukoro for about a year (small chip correction 😢). The weight of the knife at 253g is so effortless through anything. A little bougie, but using it is addicting. There was a small chip fix at one point which made me realize I HAD to get a stainless to travel with. That’s how it goes, right? I found the Hado, and in my opinion (which carries no weight), it is visually near perfect. I don’t even want to use- just sneak looks when my wife isn’t around (she hasn’t noticed it yet). Anyway, I had been on the hunt for a quality ginsan wa for a while and this masterpiece ended the search. If you’re in the market, just from an appearance perspective, this is what true tradition and craftsmanship is all about. I feel like I’m look at a skill/trade handed down over generations.

Sakai Takayuki Ginsan Warikomi vs Gesshin Kagekiyo 240mm Ginsanko- which do you prefer?

Compare the Sakai Takayuki Ginsan Warikomi Ebony Handle Japanese Chef's Gyuto Knife 240mm to the Gesshin Kagekiyo 240mm Ginsanko Wa-Gyuto. I know there’s about a 35g weight difference, the Sakai can feel a little more assembly line vs the detail of the JKI Gesshin. I guess what I’m asking- is the reputation of JKI worth waiting for their product and paying the extra premium? I don’t mind a wait, but curious if the JKI hype is heads and shoulders better.

2 Hour Wait to access the online test

It took 2 HOURS for them to start my exam. I completed the online verification at 912am for a 930 start and I was #176 in the queue…. WTF is that???? This was a 6 hour day for me. Anyone else? Completely unprofessional on Pearson to overbook. Can someone provide the link to see scores early? I am beyond frustrated.
