Crockpot BBQ Pulled Venison Roast Sandwiches

Seared a venison roast on all sides, put in crock pot with garlic/onion, combined beef stock, creole seasoning, liquid smoke, mustard, peach jelly we made from a tree in our backyard, and cooked for 8 hours on low. Shredded and topped with some bbq sauce and pickled red onions on a bun. So good!

First Trip in my Grumman was a Success!

5.6 mile trip on the Enoree Canoe Trail. Bit off a bit more than I could chew not knowing this river nor having ever canoed before. Plenty of experience in fishing kayaks, a 15 foot Jon boat…I live on the water in my free time but a two man canoe trip was certainly a team effort as well as a balancing act! Kept it upright, and the river was blown out, high and fast, and an absolute gauntlet of fallen trees and submerged wood. Overall it was fun! I think for my use case, a shorter Sportspal may fit me better than the 17’ Grumman (duck hunting, fishing, accessing remote areas for deer and hogs), but had a good time.

Canada Goose Barbacoa Leg Quarter Tacos

-2 leg quarters, season with salt, black pepper, chili powder, cumin, oregano, paprika. Sear on both sides.

-Dice one fresh garlic bud + 1/2 an onion + 2 fresh jalapeños, add to crock pot with 1 cup beef stock

-add seared leg quarters to crock pot, throw some more of each seasoning across the top, squeeze and entire lime and an entire orange into crock pot. Cook on low for 7.5 hours. Once or twice take a spoon and ladle some of the beef stock over the quarters.

-remove from crock pot, shred meat in a bowl, add a bit of the juice from the crock pot

-make tacos to your liking. I used corn tortillas and topped with queso fresco, some cabbage (tossed with lime juice, salt, and olive oil), pickled red onions, avocado, and sour cream. Pico de Gallo would have been good too!

Update to My Damaged Grumman G-17

I got a LOT of great feedback from this group on how to tackle the repairs and I wanted to say thanks! I ended up patching the hole with a rivet gun, some aluminum and epoxy sandwiched between. Did a plate on each side of the damage.

Also gave the Grumman a little love and freshened it up with a new paint job this weekend. Excited to get it on the water here soon!
