2 1/4 cup Soy sauce
3/4 cup Worcestershire sauce (too much)
3/4 teaspoons Kosher salt
1 1/2 tablespoons Ground Pepper
Marinated for 18 hours

Topped some of it with cracked black pepper

140 for 6.5 hours and then 160 for 2 hours
