How to go totally diaper free after very successful EC?

We have been doing EC with our kiddo since 3 weeks old. Worked like a charm and she figured if she gives us cues, we will take her to sink/potty and she doesn't need to do it in diaper. Since that day, she has probably pooped in diaper around 10-15 times. She's 19 months now. Now she hand signs whenever she wants to poop and actually waits for us if we are away from home or something and she poops on the actual toilet with baby seat.

So as you can see, it has been a highly successful endeavor for us and we are very proud of our kiddo.

Now, onto the next task of going totally diaper free. She does sign for peeing and does it on the toilet as well , but its a hit or miss. How do we train her? I know one way is to let go of diapers completely and when they wet themselves they sense and let you know. is there any other method that has worked for you? In our current home situation(moving and all), we can't leave her without diaper and clean up afterwards. If that's the only way, we will do it but looking for other suggestions if anybody has any.

Edit 1: Forgot to add, we have used cloth diapers since she was a month old. So she knows the sensation of wetness and even lets us know when she needs a diaper change. She just doesn't sign for peeing all the time.

We (My wife, 1 year old and I) will be starting from phoenix on 15th may, planning to stay in salt lake city area for couple days and then head to GTNP and Yellowstone area. From there we will head to Glacier NP and then head back after that. Planning to be around a 2 week trip

As of right now, I will be booking 4 days stay in cody but nothing else is finalized yet. I know cody is not ideal place to stay but trying to stay within means, and I read the drive is nice and isolated. We won't be hiking much as my wife is not a hiking person, may be 1-2 mile hikes.

I also know I am super late in planning and booking, but with a 1 year old, you really can't plan well ahead in future and thus I am compensating for that with drive time.

With all this in mind:

  1. How may days should we spend at each park? We will be mostly driving and doing little hikes here and there. Our schedule revolves around the kiddo so gotta keep it relaxed.
  2. Where should we stay apart from cody? Or should I just extend my stay in cody and backtrack all the time? Also, where should we stay for GTNP which will not burn a hole in my pocket, $200/night is something I can afford.
  3. How will be the weather? I am checking weather apps and see a decent temp during day with night temps dipping low.
  4. I plan on driving after dusk. I read its better to drive slower than speed limit after dark and expect nearly invisible bisons on the road. I have driven all around the country so I am experienced but don't want to be cocky. Should I drive at night(5-10 mph below limit) or not worth the risk? I know its a very personal preference so not expecting yes/no answers.
  5. Is there decent food in the parks or should we pack lunch/dinner in the morning? Especially for the kiddo.
  6. Am I missing something which I should know? Any warning, caution.
  7. Am I crazy for planning such a trip?

Last two are for my overwhelmed self with planning and all the articles/posts I am reading.
