Turkey (instead of chicken), eggplant, and basil stir fry
Loved this one! Super easy and healthy! I used ground turkey instead of ground chicken because it’s cheaper, English eggplants sliced into fourths because that’s all the grocery store had, and I added gochugaru, cayenne, and sesame oil, then some chili crisp on top for more spice. Make this one if you have 25 minutes!
