How to gain weight healthily?

Hey everyone, so ive been trying to figure out how to gain weight healthily because i am so tired of being too skinny.. ever since i started my new office job a few months back, ive basically been forgetting to eat half the time. im running around on stress and coffee, and last week i weighed myself and realized i lost another 6 lbs. my clothes look super baggy on me now and i just feel low energy all day

I dont wanna just eat junk food, ice cream, and fast food every night because that just makes me feel sluggish and bloated. I really need actual tips on how to gain weight healthily without just building up a belly or feeling sick all the time

Ive been trying to track what i eat for the last week to see where im slipping up:

time what i usually eat cal why its failing
8 am black coffee and 1 piece of toast ~150 no protein, way too light
1 pm turkey wrap or small salad ~400 fill up on veggies, run out of steam by 3pm
4 pm handful of almonds or chips ~150 not enough calories to do anything
7:30 pm chicken breast, rice, broccoli ~500 normal meal, but im too full to eat more

My total is only 1200-1300 calories most days, which explains why im losing weight so fast…

I know i need stuff like nut butters, avocados, and whole milk, but whenever i try to eat more i just feel way too stuffed. is anyone else struggling with this or has advice on how to gain weight healthily when you have a small appetite? would love to hear some advice

Can i freeze milk? (leaving town for a few weeks)

Soooo i accidentally bought a whole gallon of whole milk from costco yesterday without thinking, but i just realized i have to go out of town for work on friday for like two weeks and i started wondering can i freeze milk? nobody else is staying at my place to drink it and i really hate wasting food like this. someone told me i could stash it in the freezer, but im skeptical. can i freeze milk in its original plastic jug or will it straight up explode in my freezer?

Alsooo how does it taste after thawing out? like does the texture get really weird or grainy when you put it in coffee or cereal? im wondering can i freeze milk without ruining it completely or if i should just give it away to my neighbor before i leave?

Thanks for any quick tips on how to thaw it properly if it actually works
