Put both of these sauces together today, both from ferments I had going.

Liquid Sunshine is a mango habanero sauce with onion, carrot, roasted garlic, coriander, ginger, lime juice and zest, cider vinegar, and honey. Super happy with the color on this one.

Pizza Power has banana peppers, ghost peppers, garlic, onion, tomato paste, balsamic and red wine vinegar, basil, oregano, and smoked paprika. I've been making this one for a couple years now and has absolutely become my go-to for, well...pizza

Up for grabs today is a Kansept QTRO in shred carbon fiber with blue pivot collars and stonewashed Elmax. I believe I'm 2nd owner, purchased as LNIB from previous owner. I have carried it for a day around the house, but have not cut with it, and this has a good factory edge. There is a single extremely faint snail on the pocket clip (didn't really come through in the video so I took a separate picture). Otherwise the knife is flawless.

I have partially disassembled this to adjust the omega springs - there are 3 settings, it came from the factory on the lightest setting, which I found too mushy. I put them on the strongest setting and I think the action is much better now, however there is occasional and insignificant lockbar stick from the added tension. This was not present on the lighter setting, so if it bothers you, it could easily be moved back again. Centering is good and lockup is solid in all directions. Includes all factory packaging and extra springs.

This is the first time I'm repeating a recipe I previously made, and I'm happy that it turned out exactly like I remember! Most of the hot sauce I do is fermented, but this one isn't, which makes it super simple to put together.

For what it's worth, this is not a single day's harvest, but it is about a week's worth for the tomatoes and tomatillos (the tomatillos from a single plant!)

The basket has 28lbs of plum tomatoes: Health Kick, Saucy Lady, and a variety similar to San Marzano.

We have had a lot of issues with blossom end rot on our poblanos this year, which we usually don't have much trouble with.

Needless to say, we're gonna be busy this weekend in the kitchen!

1. One Track Mind Ire v1 - Black micarta & darkwash Ti bolsters / Gray stonewash 20CV
SV - $220

2nd owner, bought as LNIB and has since been carried, used, and disassembled. Edge is factory but has been honed/stropped, currently is sharp. Couple light wear marks in the dark stonewash finish on the show side of the blade from use. Clip, bolsters, scales, and backspacer all look clean. Action is super smooth, just shy of drop shut action, centering is good, lockup is solid, and all opening methods work extremely well. Only selling because I have a v2 also. Includes CoA card and all factory packaging.

2. White Mountain Knives Sailfin (minor mods) - Darkwash Ti / Stonewash Elmax w/satin flats

3rd owner - Sold to me as like new in box when I received it. I carried it a few times and was used very sparingly. I did end up disassembling it and tumbling the scales, clip and backspacer, which gave the scales more of a two-tone effect. Factory edge is decently sharp but not amazing. Very snappy action, only needs a light shake shut. Solid centering and lockup. Includes box.

3. Olitans M060 Imperial Penguin - Gold marbled CF / San Mai SLD-Magic (convex grind)

Original owner, user condition. When I got this knife, I put it through a boatload of cardboard, which is how it ended up with all the fine scratches on the blade. After that abuse, the Convex grind is still decently sharp, and glides through material extremely well. Lockup and centering are good, the centering might just barely favor clip side. The rest of the knife is in great shape. Action is very nice - it has good tension for a crossbar lock, and has a very unique and clicky sound. Includes all factory packaging which includes a tool and clip filler tab if you wanted to carry it without a clip.

4. Kansept Higonokami - Shred CF / Damascus

Original owner, LNIB condition. Never cut, never carried, never disassembled, never pocketed. Has only been out of the box and flipped a few times. Sharp factory edge, good centering, solid lockup, smooth action. Designed to be a modern, locking interpretation of the classic Japanese higonomaki style friction folder. Just received this in, but not really my jam. Includes al factory packaging.

5. Kizer Mini Militaw - Jungle Wear fat carbon & Ti / Gray stonewash S45VN (stop pin issue)

READ ME! - 2nd owner, purchased as LNIB. After a while, the internal stop pin which is pressed into the blade started working its way to one side, and began scraping on the stop pin track inside the scale (see pictures). Kizer customer support replaced the blade for me, but after a while even the replacement blade started doing the same thing. I have since taken it apart again, and gently tapped the stop pin back to center, but I expect it will start moving again. Beyond the stop pin issue, the knife is in great shape. It has been carried and used, and there are a couple fine marks on the blade. Edge is factory and decently sharp. Knife does have a small bit of up and down play, lockup is fairly late. There is one extremely small rub on the clip edge near the screw which you have to catch in just the right light (could not get it on video).

6. Kizer Mini Militaw nebula fat carbon scale inserts

Original owner - These were mounted on the knife above for most of the time that I used/carried it, but do not show any visible wear. I am not 100% sure if they fit ALL versions of the Mini Militaw, but they should fit any of the Ti/framelock versions. Includes factory packaging, which also has 2 full sets of screws for the inserts - 8 each in satin and black.

This wasn't a difficult restore, as the pan was in pretty good shape beforehand with minimal rust and build-up, but the cooking surface came out excellent!

There is a spot on the back that just refused to clean up, and I don't know what's going on there. The spot is noticeably rougher to the touch. The pan was in a lye bath for 2 weeks, but even after I scrubbed it with steel wool and a wire brush when it came out of the lye, the dark spot wouldn't go away. Vinegar bath at the end before I started the re-seasoning process didn't make a difference on that spot either. Is it maybe just a casting flaw and the super rough texture is stubbornly holding onto stuff?

My mother in-law grabbed me this Wagner for a whopping $2 at an estate sale. (Heavily warped spinner). I planned on restoring it anyway and using it as a cornbread pan.

After it was in my lye and vinegar baths and I started cleaning it up, I noticed this weird, crack-like ridge across a good portion of the bottom.

I don't think it's a crack though? The cooking surface doesn't show the mark, and the pan rings loud and clear when given a good rap with a knuckle. It almost looks as if a very thin layer of metal was smeared across the bottom of the pan. Anyone seen anything like this or have any information about it? Is it just a strange casting mark or could something have happened to this pan earlier in its lifetime to cause it?

1. Asher A-Lock V2 - Blue weave carbon fiber / Stonewash M390
SV - $140 **SOLD**

Original owner, like new in pouch condition. Never cut with, carried, or disassembled, but I did give the bearings a shot of KPL because it felt/sounded dry when I received it. Purchased on the recent release of these which sold out quickly. I absolutely love this blue weave CF, but I prefer the weight, feel, and studs on my V1 A-Lock, and I still have another Asher model with the blue CF to satisfy me. Sharp factory edge, awesome hollow grind, good centering, action, and lockup. Includes Asher pouch and stand-offs if you want to swap out the backspacer.

2. Vosteed Psyop 299 - Red micarta / Ti bolsters / brass accents / Stonewash Elmax

I am the second owner of this knife. Purchased here as like new condition. I have since carried it a couple times, and it has been used very sparingly. I may have taken this one apart to clean and re-lube with KPL, but I can't remember. There is one very faint snail in front of the pivot on the show side which is hard to see, otherwise there are no other marks that I can find. Factory edge is sharp, centering is great, and action is very smooth. Includes all factory packaging

Creamy pesto chicken pasta w/peas. I love that this thing can easily swallow an entire box of pasta with plenty of room to spare.

I believe this particular one would be circa 1920-1924? (Heat ring with the single size marking on the bottom versus the 4 digit casting/model number). Someone correct me if I'm wrong

I haven't gotten my hands on it yet. She said it does spin/wobble, but I don't know how much yet.

*Update - Unfortunately it's got a pretty pronounced bump in the middle on the bottom (or effectively a dimple in the middle of the cooking surface). Isn't a problem for my gas range, but this would be a tough one to use on a glass top.
