We have had Tater a week now, he’s a bit over 9 weeks old. He’s a very sweet boy but man, I forgot how hard the puppy stage is!!

Carnitas w/ Salsa Morita & Blue Corn Tortillas

I made some Dutch oven Carnitas along with a salsa Morita. The salsa was charrred tomatoes, onion, garlic, Serrano and the toasted dried chilies were Morita, guajillo and arbols. I also made the tortillas. I am not super experienced making tortillas and this was my first time with blue corn. Overall the tortillas were good but a little thicker than I like. Onion, cilantro and lime of course.

Made a tasty Tex Mex abomination.

I planned on making a regular chili then realized I had some (very good) chorizo at the house and experimented. Switched out regular chili powder with ancho chili, tossed in some dark chocolate at the end, swapped regular Oregeno with Mexican oregano.

Served it with topped with pepper jack, fresh white onion and diced jalapeños. On the side were corn tortillas.

Definitely nothing authentic but tasted great.

I’ve been to Cancun twice now, the first time I knew nothing of the visitax and didn’t see anything about it at the airport and no one asked. I only learned about it later on here.

Fast forward a couple years we are headed to Isla Mujeres via Cancun and I figure I should pay it for my wife and I. Again, nothing, passed straight out of the country without a peep about it.

Just my experience.

Los Burritos is the name of the place. The al pastor was incredible and straight from the trompo. The arrachera was great as well. Bonus al pastor torta in the background. Not pictured were the salsas, they had a mild avocado verde and a very spicy (I can handle very spicy too) Roja , it did not have that habanero flavor so I think it was probably arbol based. Highly recommend if you’re in the area. Trying a suadero cart tomorrow.
