Looking for a fantasy series to lose myself in.

As the title says, I'm looking for a fantasy series to lose myself in. Something akin to Terry Pratchett, but it doesn't have to be funny. The only thing I'm not keen on is books that are heavy on the romance. I'm not interested in "will they, won't they", "enemies to lovers" etc. I just want to get lost in a really well built world.

What are some of your favourite vegetarian MD meals/recipes?

I am a) vegetarian and b) autistic so when asking people about the MD and they say "just eat lots of vegetables and nuts" my brain can't differentiate from what I'm already eating as a vegetarian, but I know i do not currently eat a Mediterranean diet. Can anyone give specific examples of meals or recipes that I can try? I really really want to make the lifestyle change, but my brain struggles with new things sometimes.
