I’m researching Palestinian food culture for CELKARI, a food project exploring cuisines and food traditions from around the world.
I’m particularly interested in understanding Palestinian food through lived experience rather than relying only on restaurant menus or English-language cookbooks.

I’m not looking for a single definition of “authentic” Palestinian cuisine. I want to understand the regional diversity, family traditions and lived experiences that make Palestinian food culture what it is.

My dad was Egyptian and growing up I tried some Egyptian food.
However living in Italy and my mom/grandma cooking most times I don't feel like I really learned a lot about Egyptian cuisine.
My dad passed away almost 2 years ago and I'd love to learn Egyptian cuisine as a way to honor his legacy and carrying on the Egyptian genes/traditions.
I love cooking Roz Maamar, Egyptian rice, shakshouka, I heard of koshari although I never tried it or made it.
What are lesser known Egyptian dishes that, when you eat them, make you feel at home?
kickin' kofta kebabs with allspice and cardamom
Made this tonight and I was asked to add it to the monthly line up! The flavors were amazing! The mix of the spices were full of flavor and not too spicy. The grilling technique kept them nice and moist on the inside. I was a little nervous of the time so I added an extra minute, but it didn’t mess with the recipe at all. Also made the lime and garlic tahini to go with it as she recommends. 10/10 🤤

Lamb Mandi & Maqluba
I want to make these two dishes but I need help figuring out what 7 spice and maqluba spice is. I am aware these are prepackaged and I can get them in Middle Eastern shops but I’ve read that they can vary based on brand and unsure which to use.
So, is there a recipe I can use to make these blends on my own? I love making my own spice blends so I’d really appreciate if you guys can help me out.

California halibut with a little North African intervention.

Fresh-caught California halibut, battered with chickpea flour, Libyan sharmoula and beer, then fried until crisp and golden outside while staying beautifully flaky and succulent inside.
Served on a toasted sesame roll with cheddar, pickles, tartar sauce and cocktail sauce.
The sharmoula brings tomato, cucumber, spice and acidity directly into the chickpea-and-beer batter, giving the crust layers of flavor before the sandwich is even dressed.

Chicken and egg taste in lebanon
Ive never heard about this before and ive never tasted chicken or eggs from outside of Lebanon, but recently expats and friends from Saudi and UAE have been saying that chicken and eggs are inedible in lebanon straight up inedible, they are stating that they tried many different stores and same thing. Some am curious to know if that’s true or anyone have faced or heard about this.
(Ps: they were talking about raw chicken and eggs that you get to cook with, not any restaurant whatsoever)
Iraqi food?
In a few days I'm going to an Iraqi food market (store). I'm a big fan of trying and cooking foreign foods. What should I look out for? I'm looking for herbs/spices, other seasonings, canned foods, drinks, teas, breads, etc. Anything really would be great. Just tell me what I should look for and if it's an ingredient how I should use it. Thanks!
