Mounting GGG with Heat Shield to Weber

just received my GGG and another probe.

my Weber has a heat gauge with the exhaust vents opposite it.

I use a SNS setup and I always have the vent opposite to the charcoal above the food I’m smoking so the smoke travels over the meat

if I mount the GGG at the existing guage location it’s going to be straight above the coals so will be be measuring the wrong area.

Has anybody mounted it beside the vent? or am I overthinking it and should just mount it where the gauge is and orient the vents over the hot side.

BBQ Picanha

I got a Pichana from my local butcher and finally got the change to chuck it on my Weber yesterday.

Dry brine overnight in the fridge, then I put it on indirect heat for around 90 minutes until it reached 118f. I took it off an let it rest while I cooked some corn and Jalapeno poppers (also an eggplant not pictured) for almost an hour.

Preheated the oven as hot as it would go then put it in to crisp up the fat cap for 5 minutes.;

The recipe I used was one of Nagis from Recipetineats but I used BBQ first then finished in the oven. I also made her mushroom sauce to go on top.

Combustion Engine on the Webber Smokey Joe?

I love this little grill, but was wondering if it would just be too ridiculous to use the Combustion Engine with it? I love the idea of a portable and precise charcoal grill. I'm already invested in several of the Combustion Inc predictive thermometers...

Max temp per cook?

So far I’m liking my predictive thermometers. I’d really like a max temp per cook feature. I know it’s in the graph and I can even export the csv and see it there but the iPhone app doesn’t display max temp anywhere.

Can this be a feature request or am I just not seeing it?

Steak overcooked at 80F

I'm trying to cook a rare steak with the predictive thermometer. The steak is thawed in the fridge and left out for 30 minutes. I pull the steak from the infrared grill when the core temperature reads 80F after searing for 2 minutes and cooking at lower heat for 10-15 minutes. While it's resting the surface temperature rises to 130F and the core temperature rises to 115F (35F increase in core temperature from carry over cooking seems abnormal). The center of the steak is light pink and overcooked.

The "predictive" aspect of the thermometer seems pointless because it does not tell me when to pull the steak if I set the target to 115F.

I question what reading I should pay attention to as with a cheap thermometer I only pull the steak at 120F and it's not overcooked. Thats 40F higher than pulling the steak at 80F, and I try to probe the center of the steak with the cheap thermometer.

Why does the surface temperature rise when resting? I assume the surface would cool and the core would heat.

EDIT: I have 4 predictive thermometers and they all measure the same. I suspect that the steak temperature guides on the Internet are BS because no one has ever measured the true core temperature of a steak before the predictive thermometer existed. The cheap thermometers are probably measuring incorrectly with their single sensor.

Cut the feet off GGG shield?

This may seem like a radical idea, but bear with me.

As you can see from the photos, I have GGG shield mounted on my Kamado Joe Classic and a Weber gas grill. A few days ago I cooked a rotisserie turkey breast on the KJ using a FireBoard with its wired pit probe clipped to the end of the GGG probe. Once the KJ got to temp and stabilized, the temp displayed by the GGG was consistently around 25-degrees lower than the FireBoard. No big deal, because the FireBoard was controlling the pit temp. But I also have found that the GGG temp is consistently lower than the Weber built-in thermometer. In the photo, it’s also about 25F lower. Another thing I notice is that the GGG is way slower to react to temperature changes than either the FireBoard or Weber thermometer. As the Weber heats, it takes the GGG quite a while to catch up.

I’m wondering whether the GGG temperature readings are affected by the considerable length of the probe that’s outside the lid, where heat from the metal probe may be dissipating, lowering the temperature at the tip a bit, especially in cold temperatures. If that’s true, would it make sense to cut the feet off the shield to get more of the probe inside the lid? As I have the thick shield, and not the thinner heat deflector on both the KJ and Weber, and both are mounted on the side, not the top, would there still be enough protection for the GGG? Would there be enough protection for the plastic portion of the probe?

Is this a dumb idea?

Ready to cook!

Finally got 2 probes, and 3D printed a custom case to hold the probes and display. Ready to try these both out on the smoker (Already used one of the probes while waiting on the other one, it worked great!)

Long, long wait in the UK...

I placed my order on May 22nd expecting some wait, as shipping was noted for June. I didn't get any email confirmation, just some vague info in the Shop app.

On the 11th June I did get an email from the Combustion Store noting that the wait was over and stock had arrived, and orders would start dispatching the next week. (See previous post: https://www.reddit.com/r/combustion_inc/comments/1un22w5 where I hoped for some update, since it seems like the team are fairly active in this subreddit?).

Fast forward to today, 12th August, and still nothing. No email, no updates, not even on the shop app.

I appreciate that shipping overseas takes some time, and that there is limited stock, but when you've spent over £200 on something I'd expect some better communication from the company.

Gen 2 main unit won't charge using non-Combustion USB-C cable/charger

I foolishly threw out the charging cable because I'm trying to eliminate USB-A type plugs from my house. I thought I'd be able to change the main unit using a standard Apple 60 watt charger with an Apple USB-C cord, but the unit won't charge. It just flashes the lowest level battery even after being plugged in for hours. Am I shit out of luck? Thanks in advance.

GGG Display issue

Has anyone else experienced this? I turned it off and turned it back on again and still the display is disrupted. It still transmits to the app no problem.

Disappearing temps?

I’m having a weird issue with my new V2 probes. Anything over an hr and the temps disappear from the app except on the graph. Didn’t/doesn’t happen with my v1 probes?

Purchase Questions.

The Wifi display says it will support up to 4 thermometers simultaneously. That's perfect, I want to use it with four.

But how do you tell the 4 thermometers apart? Do they come in different color ceramic ends, can they be bought with a number on the end? Are you supposed to just remember which thermometer is inserted in each piece of meat if you are cooking multiple items at once?
