Mango Delight

Ingredients

  • Plain biscuits (such as Marie or tea biscuits)
  • Fresh mangoes (some pureed with a little sugar, some cut into small chunks)
  • 475 ml cream (heavy or whipping cream)
  • Milk (just a splash to soften the biscuits)
  • Almonds & pistachios (chopped, for garnish)
  • Sugar (to taste, blended into the puree)

Assembly Instructions

1.Prep the Mango Cream:

Divide the 475 ml of cream. Keep about three-quarters of it separate to use later. Blend the remaining one-quarter of the cream with the sweetened mango puree.

2.Build the Biscuit Base:

Arrange a flat, even layer of plain biscuits at the bottom of your serving dish.

3.Soften the Biscuits:

Drizzle a little milk evenly over the biscuits to help them soften up.

4.Add the First Layers:

Pour the creamy mango puree mixture evenly over the biscuit base. Once spread, drizzle about 1 teaspoon of the plain cream you set aside over the puree.

5.Add the Mango Chunks:

Spread the fresh mango chunks evenly across the dish, making sure to save a few pieces for the final garnish.

6.Swirl and Decorate:

Drizzle a little bit of plain mango puree on top. Use a skewer, toothpick, or the tip of a knife to gently swirl the puree into the cream in a circular motion to create a marbled pattern.

7.Garnish and Chill:

Finish the dessert by garnishing the top with the reserved mango chunks, along with chopped almonds and pistachios. Chill in the fridge for a few hours to let it set before serving.

Tried to cook outside my comfort zone and try something different

I made Jollof, Jerk Chicken & plantain.

I’ve had all before but at restaurants or when friends have made it for me, it was my husbands first time trying and he loved it!

For reference I’m Somali/yemeni & he’s Kurdish so this was something different for us.

Craving pasta but the fridge is empty... no chicken, no cheese, no veggies. Help!

Salam guys! Need some quick dinner inspiration. I want to make a really delicious pasta/spaghetti dish tonight, but I’m completely out of chicken, cheese, and vegetables.

What are your secrets to making a super simple yet highly flavorful pasta using just basic spices, oils, or whatever is usually lying around a Pakistani pantry? Would love to hear your go-to lazy recipes!

Peking duck. بط 🦆

السلام عليكم ورحمة الله وبركاته. ضعت تفاح وبصل وبهارات في البط. وضعت السكر على البط. ثم ضعت البط في الفرن. الحمدلله

Assalamualaikum! I made Peking duck yesterday. I stuffed it with apples, green onions, garlic, and spices, brushed the skin with maltose and vinegar, then cooked in the oven after about 24 hours. Also practicing my Arabic 😅

My favourite food, Khichda (Haleem) / (Meat and grain stew)! 🥘 Long prep time, nearly 3-4 hours, but the most delicious delicacy.

I make this almost once every two weeks!

Perfected my steak technique

On this edition of hypothetical future married life prep: butter basted steak and black pepper mushroom sauce (not pictured since there’s no way to make something that color and texture look appetizing lol).

The temperature ended up a medium rare, which was not intentional. Idk what I intending 🥴 I just made it and hoped for the best lol.

I tried a few different methods of making steak in a cast iron and I think this one was the best. Happily sticking to it for the future.

I’m hoping that my future husband (wherever he is) isn’t too picky about temps since I can never get it right even when I try.

Sunday Comfort Food Chicken Pulao and Raita

Assalam o Alaikum everyone!

Alhamdulillah, today's meal is absolutely amazing: piping hot Chicken Pulao and yogurt raita, along with a side salad (extra green chilies are mandatory!).

Are you Team Pulao or Team Biryani for your weekend family feast? And if you prefer pulao, do you like it light and simple, or proper spicy and flavorful?
