White people taco night! (Veggie style)

Base for the “meat” is impossible sausage and mushrooms with Taco Bell seasoning 😎 rice is sofrito seasoning from better than bouillon! Very tasty

My best sandwich yet, Nashville Hot Tofu Sandwhich

made a Nashville hot tofu sandwich and it was CTAZAYYYY. I drenched and battered the tofu first in a liquid flour and water base then panko and then doused it in 1/4 cup buffalo sauce + crystal hot sauce. I made a little slaw with cabbage and celery a little 1 tbls Greek yogurt, garlic powder, 1 dash msg,1 dash black and white pepper,1/2 juice of one lime and 1 handful of cilantro. Then added 1 chopped pickles and 3 leafs of romaine. The bread is heb rosemary sourdough.

Whipped Cottage Cheese Dill Pickle Dip

Ingredients

  • 2 cups Cottage Cheese
  • 1 cup Cream Cheese
  • 1/2 cup Greek Yogurt
  • 1/4 cup Feta Cheese crumbled
  • 2 tbsp Dill Pickle Brine
  • 1/2 cup Fresh Dill chopped
  • 2 Scallions chopped
  • 3 tsp Onion Powder
  • 3 tsp Garlic Powder
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1 1/2 cups Dill Pickles finely chopped

Garnish

  • Fresh Dill, Crumbled Feta, Chopped Dill Pickles

Instructions

  1. To a food processor or blender add the cottage cheese, cream cheese, feta, yogurt, brine, fresh dill, scallions, onion, powder, garlic powder, salt and pepper.
  2. Blend on high until you achieve a smooth and creamy texture, about 1-2 minutes.
  3. Using a spatula scrape the mixture into a serving bowl, folding in the chopped pickles.
  4. Garnish with crumbled feta, chopped dill pickles and sprinkle of fresh dill. Serve with chips and crudités.

Grilled eggplant stuffed with garlic-herb yogurt, topped with pomegranate and dill

Made these Turkish-style eggplant rolls. grilled eggplant slices wrapped around a garlic and herb yogurt filling, finished with fresh dill and pomegranate seeds for a bit of tartness and crunch. Simple ingredients but the smoky-creamy-tangy combo really works.
