Issues with high gain. I CANNOT figure out this weird digital distortion....

The main issue is some weird artifacting when using high gain amp sims, ALL of them do this. I know its not the amp sims themselves. I've attached a recording of my DI followed by the stl tonehub sim with a preset from atrium audio.

Here is EVERYTHING I've tried.
-New interface (literally today, focusrite 18i20
-New cables
-Different guitars, passives, actives, doesn't matter.
-I've tried lowering and raising buffer sizes (YES they match in the daw)
-Different bit rates (again all matching)
-Different DAWs (ableton/protools) Even standalone the sims do this.
-I've tried reducing all EMI in the room.
-Different outlets to isolate any ground issues.
-Reinstalling EVERYTHING
***THE INPUTS ARE NOT CLIPPING. Literally peaking at -6db or less. NOR is it clipping in the DAW.***

*For some reason my drive link didn't post....** https://drive.google.com/file/d/1mwCzUoNnI3fSYl0LlSJLZzGgZY3yAfrM/view?usp=drive_link

Please dear god somebody give me some ideas. For an example I will share a link of someone using the same amp sim and getting INSANELY different results https://youtu.be/Nj328YP9z1g?t=80
The di and the same tone that I use.

Intonation :( ibanez rga8 fx edge 3

Alright 9-80 ernie ball set tune to drop e. I see so many different specs for the action, first fret action, relief etc. Ive got pretty low action (2mm) and my relief at about 0.4mm, first fret action is at about 0.4 also. My low string is sharp all the way up and down, the saddle is in the second hole (farther back) and its adjusted all the way back. Should I try to sand down the nut more and give less neck relief? Worried about string buzz too..... Any specs you guys recommend? Ive also pushed the string down at the nut and saddle in case the string wasn't angled straight out of them.
