Flower spikes damaged after falling over.

Two of my orchids were knocked over today while in bloom and lost majority of their flowers. I had 11 flowers on the pink orchid and now have 2 still attached to what’s left of the spike. I had 8 flowers on the white one and now also have 3 but the spike that they’re attached to is bent (but not broken surprisingly but still concerning).
The ones in the photo are just the ones that broke off from the fall but are still in good shape to press, which I like doing. I threw the rest away.

My question is, since it’s still winter where I am, would cutting the spike right above an unopened node trigger new growth and therefore new blooms? I could just leave them as is but it makes me sad seeing them like this, especially since they haven’t been in bloom for that long.

Stem rot maybe?

Bought this today. Took it out of its pot because it was tightly packed with sphagnum moss which is not my preference. Haven’t cut any of the roots yet, most of them seem to be okay. But I noticed some black near the stem and I’m not sure what to make of it.

Progress?

I came to check on it today with the idea that I was going to have to throw it out because I started to feel like it wasn’t worth my time anymore, only for me to find this new leaf. Still no roots though Now I’m curious to see what happens. Do I continue or just throw it out?
