Cajuns in the Civil War.

I've been trying to learn more about the Cajun population in the Civil War but can't find a lot of information on them. I heard that wealthy Cajuns tended to gain officers commissions in the South, e.g. Coppens Zouaves, and many lower-class Cajuns mainly detested secession and deserted from service from the Confederacy to join the Union or get to Union safe havens. Is this true and where can I research this topic?

How to stop Spain from invading the Dutch?

I'm playing as France and I am allied with the Spanish but have a really important trade deal with the Dutch. Spain keeps invading the Netherlands and fails but I am worried that they will take Amsterdam and that will deeply ruin my economy. What do I do?
