Northern Dough Co prepared dough - what am I doing wrong?

I'm trying to work with: https://northerndoughco.com/doughy-products/original/ but I can't seem to get it right. I've followed the instructions but the dough tears when stretched rather than stretching is kind of elastic (doesn't keep it's shape) and sticky.

It was recommended to be so I've given it a go a few times. Sometimes it bursts out of its packet.

Any thoughts on what I could be doing wrong? The dough is at room temperature.

I'm not looking to create my own dough - I want to work with something off the shelf.

I replaced my Aqara G4 which worked pretty well until it died with an Aqara G410. I'm finding that it is missing event recordings in HomeKit. It get's some but not all.

Are there any settings I need to be changing, specific to the G410, to increase the sensitivity for the recordings it makes in HomeKit? I don't record in/use the Aqara app.

Because I used carry-forward allowance in the last 2 tax years, this will be the last year I can carry forward and the amount is ~£14.9k.
