
My first successful-ish sourdough bread
I finally achieved my beautiful crumb on my 7th try. This was the bread I wasn’t meticulous with the measurements and oven temp lol, given I failed on my previous attempts. There are still wet patches though because I cannot wait and I’m hungry hahaha. I believe this was 60% hydration but not sure cuz I didn’t care with that on this attempt. There was also a brownout in our subdivision so my cold proof lasted beyond 24hrs hahahaha (I expected this to have a tangy flavor). I’ll have another try and post my recipe. I cannot rely on my measurements in this attempt since my kitchen scale is cheap and cannot detect enough the lighter weights (esp. less than 5g). I’ll just keep experimenting and share my progress here. 🥹

My Lazy Sourdough Recipe
333g Bread/1st class flour
208g filtered water
40g starter
5g salt
- Mix starter and water until frothy.
- Add flour and salt. Mix and let it rest for 1hr.
- 2 sets of stretch and folds. 30 mins apart.
- 2 sets coil folds. 20-30 mins apart.
- Ferment for 2-3 hrs.
- Shape the dough and sprinkle it with flour enough to feel “matte”, then place on a bowl/banneton/basket. Cold proof for 8-12 hrs.
- Preheat oven to 200c
- Remove dough from the fridge. Score the dough, then bake. Sprinkle/spray it with water on the first 20 mins. Let it bake until crust is golden brown in color (Total baking time is 40mins, you can adjust if you want more hard crust).
- Let it cool, then slice. Enjoy!
