Mangmi Pocket Max Docked. Frustrating Experience

It took me a bit to get the video out working correctly and when I did my aspect ratio is obviously off. Anyone have an idea on what the solution may be?

I'll preface with the fact I have an Xbox Series X, Switch 2, and PS5. I tried a friends handheld using cloud gaming and was honestly blown away by how well it worked. It made me try it on my iPhone and same results. Since then I've sold the Xbox Series X and bought a Mangmi Pocket Max. It's an insane technology, maybe I'm just behind the times.
I have an old Acer laptop from 2019 and while it had it's hiccups I was still shocked by how minimal the latency felt. I could absolutely play through single player games (not ideal) on it without any major complaints.
I can't imagine playing any competitive shooters or MLB the Show with cloud gaming but I'm excited to play a lot of casual single player games from the cloud and/remote play.
Since I've gotten older and starting a family, I was relegated to gaming in my office. Excited to be able to play handheld on the couch again.
It has it's caveats but I can't wait to see where the tech is in 5-10 years.
It was between Mangmi or the Odin 2 Portal. I went with Mangmi because after adding the Portal grip it came out to about $80 cheaper.
I'm mainly interested in remote play, GBA, 3DS, and emulation up to PS2. This seems to check 90% of the boxes.
With that said, I know I could do some digging for a guide but does anyone have any suggestions on where to start? This includes organizing ROMs and setting up the device on arrived.
Any recommendations? I have a home gym so I’m really only looking for an affordable place with a Sauna. Preferably within 30 minutes walking distance.
Edit: Customer service chat was able to upgrade my plan to unlimited premium with 20gb of roaming including.
I can’t tell what exactly are the two different purchase options. My plan doesn’t include international roaming. I can purchase 5gb for $30 or 20gb of international eSIM data for $30.
How will my phone work with the international eSIM? Can I only text or call if near WiFi?
I’m using an iPhone 14 Pro if that helps
