How many of you do whole animal butchery and how do you use all of your product/bi product?

Im looking to start getting in half hogs because ym restaurant uses a lot of pork. We go through about 2 shoulders a week, and a slab of bacon a week and near us we can get half a hog for about 500 plus shipping

Also side question, ive made bacon before but this restaurant doesnt have a smoker. Can i just use a hotel pan setup with a perf pan and woodchips in the bottom to smoke my bacon?

I imagine i can start running pork chops on the menu as well. We also use the trotters for a dish currently.

Does your HR increase when you run in public?

I typically run in my neighborhood lately for very short distances, and used to run in this huge park nearby in the mornings like 9-11am up to like 6-10 miles.

I just ran 3miles in the park at 4pm and my usual 9:30s chill pace at 130-140hr was hitting 160.

There were like 6 cross country teams around the loop, dogs, people flying by on bikes etc

Sometimes this makes it really difficult for my brain to just turn off and fall into my rhythm, but i find myself constantly adjusting my stride, slowing breathing when people are near me, speeding up so i can pass someone whos running just slightly slower pace in front of me, etc

I ended up just dropping my pace to the 7:××s so i could get home faster lol

Procrastinating going to bed at night and getting out of bed in the morning.

Basically the title. I have a hard time going to bed and ending ym day and end up staying up way too late which makes it difficult to get out od bed in the morning, and when i do wake up ill scroll on my phone for 20+ minutes. I usually sleep through like 3 alarms.

For context im 28 years old. I work like 60-70 hours per week as a chef plus 1.5hrs total commute. I run every day and have run every day for the past 650 days and occasionally lift, something im trying to do more of. I feel like theres a lot of things id like to do more of but simply dont have the time. I feel like im more disciplined than the average person, but compared to how ive been in the past i feel like im slacking really hard. I used to run 40-55miles per week and now im at like 15. I think if i got out of bed earlier in the morning id have mkre time to run again and actually be prepared for the marathon i signed up for in 4 months. (Ive done one before) or study for school, as im trying to go back and change careers and start a degree next month.

I know i can function on 6-7 hours of sleep and still recover from work and working out well, but i feel like i am legitimately busy but i also make a ton of excuses and try to buy my time back at night before bed and in the morning, which in reality takes away time from the things i actually want to pursue...
