I've been on my tea journey on my own and I have a question to you all about your brewing style

I've went through a bit with tea, starting from 3 tea bags and a tone of sugar per 1,5l pot with healthy amount of lemon we always did in our house, to finding I enjoy tea without any sugar in it, to then steep black teabag for way too long because I've enjoyed a bitter kick.
To then use leaves from time to time but still the same way as teabags like a teaspon / few grams per cup and 5ish minutes.
Few years back I've heard about gonfu and I was about half way through to that style already using about 5 grams per cup ( i use big cup btw. 0,4-0,5l) and few minutes of steeping.
I tried that gonfu style brewing short with lots more tea. Tired it for a while but I had to take
a step back as I wasn't really enjoying the flavor of most teas brewed for 10-30s
Nowadays I pay attention to temp and I brew avg. 10g per cup/pot and with most teas rarely brew for a minute, it will depend what is in the pot but let's say avg. 2 minutes.

The question, what makes you enjoy gonfu? do any of you brew like me?
I find that kind of brew too light and watery for the most part.

Tea haul that has me set for few months

I've got it while ago, still haven't tried all of it, but I tried all sencha / sencha style teas to learn I generally don't appreciate those at all XD I don't think I'm ever gonna be a sencha enthusiast, even though I tried twice now to get some nice ones.

My favourites also kind of all time favourites Yunnan Gold, and Zhangping Shui Xian.
Nepal everest was really great and Ya Bao Yesheng was a positive surprise!
