What could the flakey off white like pieces on the surface of the brownish caps be?

Also the white veil and it looking like it's fragile and sort of breaking as soon as the cap tries to flare?

Also, the surface pins and clusters, too dry? I mist 2-3x/fan as well, plus a small humidifier and USB charged desk fan.

I check the cakes 2-3x daily, fan & mist as well. The humidifier is still on 75%. I've removed the circular small plug in fan, & replaced it with this Amazon USB charged desk fan that's set on 1. Each time I return to FAE and mist, the cakes have less liquid on the bottom of them, even though the humidifier remains on and I mist.

The tops of the bags I have left wide open, and I've microspore taped small rectangular openings as I mentioned earlier just thinking that the FAE would improve with the opening of the tops of the bags. Something is working whether due to that or whatever.

Since the cakes seem to have small pins and areas of no pins growing with the small shrooms, I thought I may sterilize a syringe, load it up with distilled water and inject the water into the cake a couple times when checking to provide the additional FAE by hand and spray the walls, reducing the amount of misting that residually fall to the surface when spraying.

If anyone has injected water into a cake, or has read anything about this thought, please feel free to comment. Also if anyone has any suggestions, objections, criticisms, or just your everyday off the cuff comments, please feel free to share.

I also wonder when I should start twisting some shrooms to let the smaller pins grow up. The 2 outside of the bag I picked yesterday because they were the biggest at the time. Only now they have been surpassed. The veils are tight, & they were stuck to the surface and didn't loosen up easily. But the ones in the bag now are larger, plus there's a clump of them that wonder whether or not I should pick the bunch when the largest of the clump's veil begins separating. I Chose to move these 3 bags to their fruiting stages. My Question is about the closet space, it's environment, and knowledgeable suggestions. Please excuse the length of my post. Thank you.

I wanted to try growing in a bag, so i mixed up the CVG using ultra fine vermiculite and gypsum for mushrooms. I also used a ratio of 1:1, adding a handful or so of CVG to each bag, because it didn't appear the distribution was equal. I eyeballed it, should I have weighed it? These 3 grows are Iceberg, PE-7, & SAT-South African Tanskei I sent them all on 6/18

When the bags were closed waiting for colonization, I had been fanning the 3 bags a couple times a day & misting when the inside has dried due to conditions fluctuating. Now that there is Pinning, I'm seriously concerned about the humidity, FAE, & temp. maintaining.

I have this closet, & I just hung a fan set on low on the right wall, and its velocity seems much, though i may be wrong. Below that on the small table, a humidifier set at 75, and on the floor at the very bottom, a fan/heater set at 70-75.

Should I use a smaller fan for FAE? The door is cracked like 10" open. I rolled the bags down like 4" & clipped the top of the bags & left opposite ends opened 2"-4" for FAE. I wondered should I just open the top of the bags? The 24th, a week after S2B, I saw the networks forming, and today, 6/29, are the bags as they appear with pins.
