Luau for the residents in Memory Care and their families tonight. They wouldn't let me bury it so hickory smoked for two hours then braised in oven overnight. Dessert I'm calling haupia hand pies. A little slab of the coconut pudding topped with a pineapple rum glaze wrapped in puff pastry. Will be deep fried and topped with cinnamon and sugar. Authentic? Probably not, but I think I came close.
