Too tender?

My last few brisket cooks have been pretty similar: Costco prime brisket, 18-20lbs untrimmed, cooked double-indirect (no wrap, fat side up) overnight, removed from grill when probe tender at about 200 degrees, wrapped in foil and placed into a cooler for 4-6 hours.

TheI’ve all been absolutely delicious, but seem to be a little too tender for my taste. Enough that it’s difficult to slice in pencil thin slices.

I suspect that the cause may be too long of a rest in the cooler (it’s one of those yeti style coolers that promise to keep things hot or cold for days). Unfortunately, due to the way that my family works and the convenience of overnight cooks, it will probably be too difficult for me to plan for a shorter rest time in the cooler.

I’m wondering if next time, my course of action should be to remove from the BGE at 180 or 190 degrees, before the brisket is completely probe tender, wrap and place into the cooler. The long rest in the cooler may suffice to bring the brisket to probe tender without it being too tender.

What do you all think? Any other ideas?

A couple photos of the now world-famous owls.

I’ve seen a couple posts asking about the activity around a certain location in OC (not disclosing, but I think the spot is pretty well known by now), but not photos yet in this subreddit. Sony 100-400 F4.5 GM + 2x Teleconverter

For those of you wanting to know how this lens works with the 2x teleconverter. These shots were taken this morning in SoCal June Gloom with the new lens and 2x teleconverter. These photos are uncropped, unedited. Raw file imported into Lightroom and exported as .jpg (Small size, otherwise photos were too large to attach).
The house finch is at 1/500, F9, ISO 5000. The hummingbird is at 1/500, F9, ISO 8000, and the Bewick’s Wren is at 1/640, F9, ISO 25600.

Juvenile Least Terns

Shot through a fence from a distance, and cropped heavily. Least Terns are considered an endangered species in California, so really wonderful to see these at one of the nesting sites in SoCal. Note: each nesting site is labeled with a painted number on a rock. At the time, there were at least 25 nesting sites at this location. Hopefully more now since this photo was taken.

These little ones have been all the rage this week at Huntington Central Park. There are 3 juveniles, though I heard this morning that a hawk caught one of them. Sad if true, but nature can be cruel at times.
